Gout is an inflammatory arthritis caused by the buildup of uric acid crystals in the joints, leading to sudden episodes of severe pain, swelling, and redness. Uric acid is a normal waste product formed when the body breaks down chemicals called purines, which are found naturally in our cells and in certain foods.

Top Gout Triggers Among Hmong Men — and Why They Trigger Attacks
- Organ meats (liver, kidney, tripe) Why it triggers gout: Organ meats are extremely high in purines, which the body breaks down into uric acid. High purine intake directly raises uric acid levels and can precipitate gout attacks.
- Red meat (beef, pork) Why it triggers gout: Red meats contain moderate to high purine levels, and frequent consumption increases uric acid production. Many traditional Hmong dishes use pork heavily.
- Beer and alcohol (especially beer) Why it triggers gout: Beer contains purines from brewer’s yeast and also reduces kidney excretion of uric acid. Alcohol metabolism increases lactic acid, which competes with uric acid for kidney clearance.
- High-purine seafood (anchovies, sardines, mussels, trout, tuna) Why it triggers gout: Many seafoods are rich in purines. Seafood is commonly eaten at gatherings and celebrations, increasing exposure.
- Sugary drinks (sodas, sweetened juices) Why it triggers gout: Drinks sweetened with fructose raise uric acid levels by accelerating purine breakdown and increasing uric acid production.
